STUFFED CHICKEN FILLET

ASALAAM-WA-LAIKUM LADIES , 

My recent ways of preparing food has changed a little as I’m trying to eat just a little healthier by cutting down  on salts and sauces . I have been trying many different ways of changing my chicken fillet recipes and this was my most recent prepared meal. I must say it takes a lot getting use to this , as I am very use to cooking my food saucy . Trust me not something my husband enjoys :-p

INGREDIENTS

1/2 kg chicken fillet

1 tsp garlic

1 tsp Ina paarmans Cajun spice

1/2 Ina paarmans peri peri spice

1/2 tsp Robertson chicken spice

olive oil

filling :

cottage cheese

butter

basil pesto ( optional )

jalapenos

red peppers

sliced olives

spring onions

METHOD

Butterfly the chicken fillet.

Add all the spices to olive oil

Add chicken to marinade , leave to marinate for 30 minutes

place filling in the chicken as shown above ( I found that the amount of my filling was too little , double the quantity then what I have in picture )

close the fillets , at this stage you can cover the whole fillet in foil and bake it until done or take the fillets and pan fry it .

serve with salad and garlic rolls .
